The evening will begin with a Champagne Toast to CARA

• • Hickory smoked Roma tomatoes brulee’d with local mozzarella over herb crostini, basil-pecan pesto, and balsamic dressed greens
  
  
  • Roasted Manchester Farms Quail with warm mushroom salad, rosemary, and brown butter raisin sauce.
    • Veg option: Wild rice – cabbage roll  (same set up)
  
  
  • Shrimp & Grits – sautéed shrimp in tasso ham gravy with roasted tomatoes and parmesan grits
    • Veg option: without tasso ham
  
  
  • Slow-cooked Clayton Farms fresh bacon over caramelized fennel mashed potatoes with truffled gold beets
    • Veg option: cured & smoked firm tofu (same set up)
